Banana bread with coconut and cinnamon

The other thing i baked today is banana bread! I made banana cake before and banana cupcakes both topped with either caramel or the classic cream cheese frosting. Thie loaf smelt oo soooo sooo good when it was being baked up in the over and the hint of cinnamon made it ever better as i said before i love cinnamon. You could drizzel some hot caramel sauce on top or even chocolate but i kept it plain since i know that my dad loves banana cake and he doesnt need any extra sugar lol. The only disadvantage that i had was the cake was all browned outside but it wasnt ready yet on the inside so the bottom of the cake burnt a bit. Maybe i should have turned the oven off and let the inside slowly cook. I cut a little part of the bottom off so now my lil mistake isnt noticable ;)

A random cupcake of mine i felt like uploading it since i like the colors =P lol

Chocolate almond torte

Ive been a lil sick for a few days and its been hell not being able to bake! But today i just had to had to haaaaaaaaaaaaaaaadd tooo bakkkee!!!!!! anything at all!!! im short on ingredients at home so i tried looking for a simple recipe and whats on my to do or should i say to bake list is a chocolate torte. The recipe was quite simple actually but you need to whip up your eggs whites alone, chocolate alone, egg yolk alone so lets just say that my kitchen was a bit of a mess after finishing up this recipe.

Was it worth the mess? YES IT WAS =D! i was a bit worried at first cus the batter looked so little and my spring form pan was a lil big but after folding in the egg whites the volume literlly doubled up! ( dont underestimate whipped egg whites) I baked it for around 30 mins and it came out just the way i wanted it to with the lil crumbly top. suuuuccceeesssss!!!! Chocolate quality is importent.

I just had to drizzel some chocolate and add a scoop of icecream!

Apple Streusel Bars!

A yummy bar topped off with cinnamon apples and streusel.. sounds like comfort food doesnt it? well it sure it!

The best part is having your whole kitchen smell like an apple pie (which is also on my list) there is something about cinnamon that makes food more comforting.

Ever wondered how the sun tastes like?

Good morning my fellow readers! (if anyone is out there)

So does anyone know how the sun tastes like? well ill tell you its a deep deep dark secret so shhhhhhhhhhhh.... is it sweet, salty or sour? we'll ill reveal the hidden truth right here and now!. PASSION FRUIT AND MANGO!!!!! SHHHHHHHHHH!

Passion fruit mango bars are deliciously refreshing with a slight tangy flavour due to the passion fruit. Baking these are extreamly easy. The base is a gramcracker crust, simple right? and tastes soo soooo goood. I didnt puree the passion fruit because i like the affect the seeds give the bar but you can if you want to. Sadly i dont have any left since my mom took them all to work.

Crazy for Coconut!

After a busy week i finally got the time to bake a cake thats on the top of my to do list! I never made a full on coconut and i absolutely LOVE coconuts! There are so many desserts which you can incorparte coconut in.

So my day started of as a lazy one to be honest but the thought of warm coconut custard changed my mind! The filling of the cake is coconut custard with some shredded coconuts (yum?). After i cooked up the custard i poured the custard in a bowl covered the top with plastic and placed it in the fridge to cool. I started preparing a simple white cake recipe with coconut milk and a drop of coconut extract. I should count each time i say coconut in this post lol.

When the cakes were done baking I let it cool at room tempreture and when it was completly cooled i started preparing the cream cheese frosting (no coconut here) the sweetness of the coconut custard filling with perfectly compliment the sweet get tangy cream cheese frosting. I also semi-toasted some shredded coconuts.

Assembling the cake was pretty easy only took about 10 minutes! You can judge the result on your own!
My favourite part of this cake is the filling its so creamy and so so COCONUTY! It also thickned up beautifuly. I dont mind eating down a whole bowl of warm coconut custard, thinking about it makes my mouth water with joy!

over all the level of difficulty for this cake from a scale of 1-10 is a 3 =)

Warning thinking about this coconut cake might cause weight gain.

Loving the colors

mmmmmm....all wrapped in creamcheese

The mighty thick layer of coconut custard!
